Perfect weeknight recipe – quick, simple, healthy yet DELICIOUS!
Mexican Chicken Dinner
Approximately 2 cups of cooked shredded chicken (I usually boil 2 -3 chicken breasts cool and shred – for quicker meals use rotisserie chicken)
1 jar of your favorite salsa
1 cup of shredded Mexican blend cheese – low fat
Optional – extra salsa, sour cream (or Greek yogurt), avocado (or guacamole), olives, limes, fresh cilantro, tortilla wraps.
Place shredded chicken in pan, pour salsa, and bring to simmer over medium heat. Simmer for about 5 minutes to let flavors meld. Add cheese and stir until melted. Remove from heat.
You can either serve as is with garnishes of your choice, or place on a tortilla wrap topped with garnishes and roll up, or serve over/with rice of your choice!
